Preheat oven to 350 degrees. Lightly mist muffin pan with cooking spray (12 muffin tin).
Combine oats, brown sugar, baking powder, cinnamon and salt ina a large bowl. Stir to thoroughly mix.
In separate bowl, whisk together the egg white, egg, applesauce , mik and vanilla. Add the wet ingredients to the dry ingredients and stir until blened together. Fold in the chopped apples.
Spoon the oatmeal mixture evenly between the prepared muffn cups. Bake uncovered for 18-22 minutes or until oatmeal is lightly browned.
